Shortbread Cookies
These crumbly cookies have a shortbread-like texture.
Yield: ~32 cookies
Ingredients
2 cups almond flour
3 tbsp coconut oil, softened
16 dates (That is plenty--maybe even more than you need, but 6 dates wasn't enough.)
1-2 tbsp applesauce
1 tbsp vanilla extract
1/4 tsp salt
1/4 tsp baking soda
Instructions
1. Add wet to dry.
2. Bake at 325 degrees for 5-10 minutes. Flip. Bake upto 5 minutes more.

Notes: The vanilla imparts a nice flavor.
