Southwest Veggie Burgers

These veggie burgers have a southwestern flare. The sweetness of the sweet potatoes, cheesiness of the nutritional yeast, and heat of the chili powder come together to give these burgers a unique taste.

Yields 6-8 burgers

 

Ingredients

1 cup cooked rice

1 cup cooked black beans

1 cup sweet potato

1/4 cup diced tomatoes

1/4 cup diced roasted red peppers

1/4 cup shredded carrot

1/4 cup cilantro

3 green onions

2 cloves garlic

3 tbsp nutritional yeast

1 tbsp chili powder

1 tsp cumin

 

Instructions

1. Preheat oven to 400 degrees.

2. Combine ingredients. Form into 4 patties.

3. Bake 20-25 minutes. Flip. Bake 10-15 minutes more.

 

Note: This veggie burger tastes best the day it is made. (It is slightly dry upon reheating.)

 

Notes 2: Colorful. Sticks together well. Tastes mostly of sweet potato.
