Spaghetti Squash Kugel
This spin on kugel uses spaghetti squash in place of the noodles. This dish makes the perfect dessert.
Yield: 8 ramekins
Ingredients
4 cups cooked spaghetti squash
3 eggs
12 dates, mashed
2 tsp cinnamon
2 apples, diced
1/3 cup raisins
Instructions
1. Preheat oven to 375 degrees.
2. Whisk eggs, dates, and cinnamon. Add spaghetti squash. Toss to coat. Mix in apples and raisins.
3. Bake for 45 minutes.
