Spaghetti Squash Mac and Cheese

Spaghetti squash replaces pasta in this mac and cheese dish.

Ingredients

1 spaghetti squash (~4 cups)

2 cups broccoli (optional)

1 tbsp coconut oil

1 tbsp flour

1 cup milk

1.5 cups cheddar cheese

1/4-1/2 cup Parmesan cheese

 

Instructions

1. Combine spaghetti squash and steamed broccoli.

2. Melt coconut oil in saucepan. Whisk in flour.

3. Add milk. Add cheese. Stir until melted.

4. Pour cheese sauce over spaghetti

Notes: The original recipe only called for 1 cup of cheddar cheese, but that was not enough.
