Spaghetti Squash with Tomatoes, Mushrooms, & Parmesan
Enjoy this fresh take on spaghetti squash.
Ingredients
1 spaghetti squash (~4 cups)
8 oz mushrooms (~2 cups)
about 10 oz grape tomatoes
1/4 cup Parmesan cheese
2 garlic cloves (opt)
1 tbsp fresh thyme (opt)
fresh parsley (opt)
salt, pepper
Instructions
1. Saute mushrooms with spices. Add tomatoes. Add cooked spaghetti squash. Sprinkle with Parmesan cheese. Enjoy!
Inspired by Pickled Plum
Notes: The original recipe did not call for tomatoes, but it was a needed addition. (I did not measure out the tomatoes.) Try adding kale or chicken next time.
