Spanish Rice

This simple rice is easy to make and has a great tomato/paprika/thyme flavor with soft celery and onion throughout.

Ingredients

1 onion

1 cup celery

2 cloves garlic (I couldn't taste it)

14.5 oz can tomatoes

1 cup rice

1.75 cups water

1 tsp paprika

1 tsp thyme

 

Instructions

1. Saute onion. Add celery. Saute. Add garlic. Saute.

2. Add can of tomatoes. Deglaze pan. Add spices.

3. Add rice and water. Bring to a simmer.

4. Cover and cook until all water is absorbed.

Notes: The second time I made it, I didn't follow the recipe exactly, but I kept having to add more water. I was not super impressed.

Spanish Rice

This dish has a great depth of flavor.

Ingredients

2 cups rice

1 pound Roma tomatoes

2 garlic cloves

1/2 onion

bay leaf

1 tsp kosher salt

3.5 cups broth or water (I used mostly broth but some water)

 

Instructions

1. Place tomatoes, 3/4 cup broth (to start), garlic, onion, and salt in blender.

2. Add broth to reach 5.5 cups of liquid.

3. Place rice in dry skillet and cook until fragrant (~5 minutes).

4. Add tomato puree and bay leaf.

5. Cover and simmer untl all liquid is absorbed

Notes: Original recipe only called for 3.5 cups blended tomato/broth mixture, but I needed to add more.
