Spicy African Chicken and Almond Stew

The almond butter gives this soup a creamy consistency

Ingredients

4 chicken breasts, diced

1 cup onion

1 tbsp garlic

1 tbsp fresh ginger (I didn't use)

1 sweet potato

1 apple

3/4 tsp cayenne

3 cups broth + 3 cups water

1 large tomato

1/2 cup almond butter

 

Instructions

1. Brown chicken. Remove.

2. Saute onion, garlic, and ginger. Add sweet potato, apple, cayenne, stock, tomato, and almond butter. Simmer until vegetables are tender.

3. Return chicken. Simmer until cooked through (~5 minutes).

4. Garnish with cilantro.

 

Notes: Sweet and spicy. There might be a faster way to cook the sweet potato though. Chicken was a tad dry. Recipe might work good with thigh. Not really a stew.
