Spinach with Tomatoes, Mushrooms, and Onions

This spinach dish is very flavorful--with a hint of garlic and balsamic.

Servings: 8-10

 

Ingredients

3 cups onions

12 cups fresh spinach

10-15 mushrooms (approx 8 oz)

3 cups grape tomatoes (optional)

1 tbsp balsamic vinegar (or more)

3 cloves garlic

 

Instructions

1. Saute onions.

2. Add balsamic vinegar and deglaze the pan.

3. Add sliced mushrooms and tomatoes. Season with salt and pepper.

4. Add spinach. Cover and cook until spinach wilts.

Notes: The spinach wilts down to barely nothing (definitely not the main component of this dish. Very colorful. Can't really taste the balsamic vinegar.
