Strawberry Banana Baked Oatmeal with Coconut

This strawberry banana baked oatmeal is simple to prepare and tastes great.

Yield: ~6 ramekins

 

Ingredients

1.5 cups oats

2 bananas, mashed

1/2 cup coconut

1 cup strawberries

1/4 cup date syrup

2 tbsp coconut oil

2-3 tbsp milk

 

Instructions

1. Preheat oven to 350 degrees.

2. Add wet to dry.

3. Bake ~20 minutes.

1/3 cup dates (Do NOT omit)

1 egg

1 egg white

3/4 cup milk

2/3 cup mashed banana

3/4 cup strawberries (or more)

1/2 tsp vanilla

1.5 tsp baking powder

1/4 tsp salt

 

Instructions

1. Preheat oven to 350 degrees.

2. Add wet to dry. Stir in strawberries.

3. Bake 22-25 minutes. Enjoy!
