Strawberry Bread
If you like strawberries, give these muffins/bread a try.
Yield: 8-12 mini muffins
Ingredients
1 cup strawberries
1 2/3 cups flour
2/3 cup applesauce
2 eggs
3/4 cup dates, mashed
1 tsp cinnamon
1/2 tsp baking soda
dash salt
Instructions
1. Preheat oven to 350 degrees.
2. Mix wet into dry.
3. Fold in strawberries.
4. Bake ~40 minutes for bread or ~20 minutes for muffins

Notes: Hearty texture with pops of strawberry.
Strawberry Bread
This strawberry bread uses freeze-dried fruit to flavor the base.
Yield: ~12 mini muffins
Ingredients
1.25 oz freeze-dried strawberries
22.5 tbsp flour
1.5 tbsp cornstarch
1.5 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
1/2 cup coconut oil
4/3 cups dates (or less)
3 eggs
1 tsp vanilla
2/3 cup milk
mix-ins, such as strawberries and walnuts (highly recommended, not in original recipe)
Instructions
1. Preheat oven to 350 degrees.
2. Grind freeze-dried strawberries
3. Beat coconut oil and dates. Add eggs one at a time. Add vanilla.
4. Add flour, alternating with milk.
5. Bake 8-18 minutes.

This strawberry bread has a hearty flavor.
Yield: ~24 mini muffins
Ingredients
5 tbsp coconut oil
1 pint strawberries
1.75 cups flour
1 tsp baking soda
1/2 tsp cinnamon
1/4 tsp baking powder
1/4 tsp salt
1 cup dates
2 eggs
1/3 cup water
approx 1/2 cup walnuts (optional, not in original recipe, but taste great)
Instructions
1. Preheat oven to 350 degrees.
2. Cook strawberries. Mash.
3. Whisk dry ingredients.
4. Cream coconut oil, sugar, and eggs.
5. Add flour alternatively with water, beginning and ending with flour.
5. Fold in strawberries.
6. Bake 1 hour for loaf.

Notes: Mushy texture when warm, but good when cold. Doesn't look very appetizing (mine was completely brown). Strawberry flavor is spread throughout.
