Superfood Quinoa (with Kale, Avocado, and Pomegranate)

This superfood quinoa contains massaged kale, pomegranate seeds, and avocado.

Ingredients

1 cup uncooked quinoa

4 cups kale (increased from original recipe, which only called for 2 cups)

3-4 tbsp lemon juice

3-4 tbsp olive oil

1/2 tsp salt

1 cup pomegranate seeds

1 avocado

1-1.5 cups red onion (increased from original recipe, which only called for 1/2 cup)

 

Instructions

1. Cook quinoa.

2. Massage kale with lemon juice, olive oil, and salt.

3. Combine ingredients. Enjoy!

Notes: Doesn't have a ton of pomegranate seeds or avocado. You can add a bit more if you would like.
