Sweet Potato Crackers

These crackers taste like goldfish or Cheez Its. They are crispy and delicious and so easy to throw together.

Yields: 4 baking sheets full of crackers

 

Ingredients

1.5 cups flour

1 cup sweet potato

3 tbsp coconut oil (chilled)

2.5 tsp baking powder

1/2 tsp salt

 

Instructions

1. Sift dry ingredients. Mix in coconut oil to form coarse meal.

2. Add sweet potato Roll as thin as possible.

3. Cut using cookie cutters or knife..

4. Sprinkle with salt, sesame seeds, and/or cayenne.

5. Bake at 350 degrees for 10 minutes. Flip. Bake 3-5 more minutes. (If you extend it to 10 more minutes, it will burn)
