Thai Quinoa Bowl

The peanut sauce really pulls these dishes together.

Ingredients

Quinoa Bowl

3/4-1 cup cooked quinoa

1/4-1/2 cup shredded red cabbage

1/4 cup edamame or chickpeas

1/4 red bell pepper (about 1/2 cup)

2-4 tbsp carrots

1/4 cup diced cucumber (optional)

1/4 cup snow peas or sugar snap peas (opt)

1-2 tbsp cashews or peanuts

 

Salad Bowl (Fit Mitten Kitchen- details of salad don't matter)

2 cups greens

1/3 cup cooked quinoa

1/4 cup red bell pepper

1/4 cup shredded red cabbage

1/4 cup roasted sweet potato

1/4 cup avocado

 

Salad Bowl (Closet Cooking)

3/4 cup kale

1/4 cup quinoa

1/4 cup carrot

1/4 cup cucumber

1/4 cup red bell pepper

1/4 cup shredded purple cabbage

1 tbsp peanuts

 

Dressing Option #1 (Salt and Lavendar, creamy, not a ton of flavor)

1 tbsp peanut butter

1 tsp lime juice

1 tsp olive oil

1/2 tsp soy sauce

1/3 clove garlic

4 tsp water

 

Dressing Option #2 (Damn Delicious)

1 tbsp peanut butter

1 tsp lime juice

1 tsp soy sauce

2/3 tsp sugar

2/3 tsp chile paste

2 tsp water

 

Dressing Option #3 (Food Network- good, creamy)

2 tsp peanut butter

3/4 tsp lime juice

3/4 tsp soy sauce

1/4 tsp chile garlic sauce

1/32 tsp salt

1.5 tsp water

 

Peanut Lime Dressing #4 (Once Upon a Chef, thin, limey dressing, ok)

13 oz can coconut milk

1/4 cup peanut butter

1/3 cup dates

1.5 tbsp soy sauce

1 tbsp red curry paste

3 tbsp lime juice

 

Instructions

1. Combine ingredients and enjoy!
