Thin Mint Cookies- Recipe 1
The trick to thin mint cookies is a really crispy inner cookie. I'm still experimenting to create the right recipe.
This recipe is not as crisp as it could be. Texture is crumbly without chocolately coating. Not very sweet without chocolate coating.
Yield: ~16 cookies
Ingredients
1 cup almond flour
1 tsp coconut flour
2 tbsp cocoa powder
1/4 tsp baking soda
1/8 tsp sea salt
2 tbsp coconut oil
1/4 cup dates
1 tsp peppermint extract
Instructions
1. Combine dry ingredients. Add wet.
2. Roll between two pieces of parchment.
3. Cut out with cookie cutter.
4. Bake at 350 degrees for 10 minutes. Flip. Bake 5 minutes more. Let cool.
5. Coat with mint chocolate (see other recipe).

I only tried this recipe without the chocolate coating, and it wasn't sweet at all. It tasted like a cracker.
Ingredients
1/2 cup buckwheat, ground into flour
1.5 tbsp cocoa powder
1/4 tsp sea salt
1/8 tsp baking soda
3 dates
1 tbsp softened coconut oil
5 tsp milk
3/4 tsp mint extract
Instructions
1. Preheat oven to 400 degrees.
2. Sift dry ingredients together. Add wet to dry.
3. Roll out to 1/8-1/4 inch thickness.
4. Cut with cookie cutters.
5. Bake 15-16 minutes on parchment. Let cool.
6. Coat with mint chocolate (see other recipe).
