Twice Baked Sweet Potatoes with Oat Pecan Streusal

These twice baked sweet potatoes are presented beautifully in their original shells.

Ingredients

1 sweet potato
1 tbsp milk
1 tbsp dates

1/5 tsp cinnamon
1/20 tsp nutmeg
pinch salt

Streusal Ingredients

4.8 tbsp oats
3.2 tbsp pecans
1.8 tsp dates
1.8 tsp coconut oil
1/5 tsp cinnamon
pinch salt

 

Instructions

1. Cook sweet potatoes in the oven

2. Blend some of the oats (1.8 tbsp of them). Combine remaining streusal ingredients.

3. Scoop sweet potato out. Mix with other ingredients. Return to shell. Top with streusal.

4. Bake at 400 degrees for 15 minutes.
