Vegan Pizza Scalloped Potatoes

These scalloped potatoes are SO good. They taste like pizza.

Ingredients

3 pounds potatoes

1/2 cup (80g) diced onion

4 cloves garlic, minced

2 cups water

1.5 cups raw cashews, soaked overnight

1.5 cups salsa

2 tbsp tomato paste (I omitted since I didn't have any)

1.5 tsp paprika

1/2 tsp dried mustard

sea salt

 

Instructions

1. Soak cashews overnight.

2. Use mandolin to slice potatoes

3. Preheat oven to 375. Spray 9x13 dsish with nonstick spray.

4. Blend 2 cups water, cashews, onion, garlic, salsa, tomato paste, paprika, and dry mustard until very smooth.

5. Pour a thin layer of sauce into casserole dish. Place layer of sliced potatoes on top. Season with salt. Repeat--ending on a layer of sauce.

6. Cover with foil and bake for 45 minutes. Remove foil and bake another 20 minutes.

Notes: Mine didn't brown, so I broiled it for 5 minutes at the end (not really needed for flavor)
