Vegetarian Moussaka
Ingredients
1 eggplant
1 onion
1.5 cups cooked chickpeaas
1 cup cooked black beans
14 oz can diced tomatoes
4 cups fresh spinach

5/8 cup Greek yogurt
1/2 cup cottage cheese
1/4 cup buttermilk
1.5 eggs
1/2 cup shredded cheddar cheese (opt)
1 tbsp dried oregano
2 tbsp dried parsley
1 tbsp cumin
1/4 tsp fennel seeds
1/4 tsp salt
1/4 tsp pepper
Instructions
1. Preheat oven to 350 degrees.
2. Sprinkle eggplant slices with salt and pepper. Cover with weight. Let rest for 30 minutes.
3. Process beans in food processor.
4. Saute onion (~5 minutes). Add beans, canned tomatoes, spices, and 1/2 cup water. Bring to boil. Cover and simmer 10-15 minutes. Stir in spinach.
5. Arrange eggplant on bottom of baking dish. Spoon over bean mixture.
6. Process yogurt, cottage cheese, eggs, buttermilk, salt, and pepper. Pour over dish. Sprinkle with cheddar cheese. Bake 45 minutes.
