Veggie Baked Ziti

This ziti recipe tastes great and is full of vegetables.

Yield: ~6 servings

 

Ingredients

5 oz pasta

2 cups onion

4 cups mushrooms

2-3 cups frozen spinach

3/4 cup ricotta

2 tbsp fresh basil

1.5 cups crushed tomatoes

1/2 cup + 2 tbsp mozzarella cheese

2 tbsp Parmesan cheese

 

Instructions

1. Preheat oven to 375 degrees.

2. Cook pasta.

3. Saute onion. Add mushrooms. Cook. Add spinach. Cook.

4. Remove from heat. Stir in ricotta and basil. Add pasta, tomatoes, and 1/2 cup mozzarella.

5. Bake with remaining mozzarella (2 tbsp) and Parm on top for 15 minutes.

 

Notes: In the recipe above, I doubled the amount of onions, mushrooms, and spinach from the original recipe. I love the additional quantity of vegetables in this version.

 

Notes 2: I used 1/2 can whole tomatoes instead of 1/2 cup crushed tomatoes because that is what I had on hand. There wasn't enough tomato in it. There was the perfect amount of veggies though. Try again with crushed tomatoes. You can really taste the fresh basil.
