West African Spinach with Spicy Peanut Sauce

Peanut butter adds a creamy richness to this dish.

Ingredients

1 pound fresh spinach

1 onion

2 cloves garlic

2 hot chiles (or 1 tsp red pepper flakes; I used 1/4 tsp red pepper flakes and it wasn't spicy at all. Then I used 1.5 tsp and it was a ta too spicy)

14.5 oz diced tomatoes

1/4 cup peanut butter

 

Instructions

1. Sautee onion, garlic, and chiles.

2. Stir in tomatoes and peanut butter. Cook 5 minutes. Add a little water if needed. Add reserved spinach. Season with salt.

 

Notes: The peanut butter helps balance the spicyness of the dish
