Wild Rice and Dried Mushrooms

This Asian-inspired rice recipe comes together with both sweet and salty flavors.

Ingredients

1 cup dried mushrooms

2.5 cups water

1 cup wild rice

1/2 cup orange juice

1/4 cup dry sherry (I omitted)

1/2 cup carrots

2 tbsp fresh parsley

1/2 cup walnuts

2 tsp soy sauce

 

Instructions

1. Soak mushrooms in warm water.

2. Place rice in pot with mushroom soaking liquid and enough water to equal 2 cups. Add orange juice, sherry, and carrots. Bring to a boil.

3. Reduce heat. Cover and simmer 30 minutes.

4. Add mushrooms. Continue cooking.

5. Add parsley and soy sauce.

6. Stir in nuts.
