Winter Minestrone Soup

This soup is delicious. The broth and tomato paste combine to form the perfect base. And the fennel shines through well

Ingredients

1/2 cup onion

2 garlic cloves

1.25 cups acorn squash (approximately 1/2 pound)

2.5 cups swiss chard

3/4 cup zucchini

1/2 cup carrot

1/2 cup fennel

1/2 cup cooked Great Northern beans (can double if you would like)

1 cup water

1.75 cups stock

5 tbsp tomato paste

1/2 tsp dried basil

1/2 tsp oregano

1/8 tsp black pepper (reduced from original recipe)

 

Instructions

1. Saute onion and garlic with dried basil and oregano.

2. Add vegetables. Saute 5 minutes.

3. Add water, broth, and tomato paste. Bring to a boil.

4. Simmer 10 minutes.

5. Add swiss chard and beans.

6. Season with pepper and enjoy!

 

Notes: The acorn squash tastes really good with the tomato base. The fennel isn't even necessary
